You’ll Need:
1 can (15 ounces) dark beans, depleted and flushed
1 tablespoon olive oil
1 medium red ringer pepper, diced
1/2 glass red onion, diced
1/4 teaspoon salt
3 cloves garlic, minced
1 glass solidified corn
1 teaspoon cumin
1/2 teaspoon bean stew powder
juice from 1/2 lime
2 glasses (16 ounces) red enchilada sauce, isolated
5 9" flour tortillas
1 glass destroyed Monterey jack or cheddar
How to Make:
- Preheat the broiler to 350 degrees F.
- In a medium skillet, heat 1 tablespoon olive oil over medium warmth. Sprinkle ringer pepper and red onions with salt and saute for 6 minutes, until onion is translucent. Include garlic and saute 1 minute more, until fragrant.
- Include the solidified corn, dark beans, 1/2 container enchilada sauce, stew powder, cumin and lime juice. Warmth over medium low until the corn is defrosted, around 4-5 minutes.
- Spread1 measure of enchilada sauce into a 9x13 inch or likewise estimated meal dish.
