You’ll Need:

1 tablespoon olive oil
1 medium yellow onion, coarsely hacked
1 medium green chime pepper, cleaved
2 huge carrots, cut
2 stalks celery, hacked
1 medium zucchini, cut into half moons
3 cloves garlic, minced
1 can (13.5 ounces) tomato sauce
1 can (13.5 ounces) smashed tomatoes with juices
1/2 container red wine
2 tablespoons new cleaved parsley
1 teaspoon dry basil
1 teaspoon oregano
5 containers vegetable stock
10 ounces dry cheddar tortellini
2 containers new spinach 

How to Make:

  1. In a dutch stove or substantial pot, heat 1 tablespoon of olive oil over medium warmth. 
  2. Saute the onions, chime pepper, carrots, and celery until the onion is translucent, around 10 minutes. Include the garlic and cook until fragrant, around 1 minute. 
  3. Include the new parsley, dry basil, oregano, red wine, tomato sauce and smashed tomatoes. Blend to consolidate, at that point pour in the vegetable juices. Heat the blend to the point of boiling on high warmth, at that point include the tortellini and zucchini.
